  1. Make ready 1 tablespoon neutral oil
  2. Get 3 gloves garlic chopped
  3. Take 2 tablespoons ginger chopped
  4. Prepare 3 tablespoons gochujang
  5. Get 1 cup kimchi chopped
  6. Prepare 4 cups chicken stock
  7. Prepare 1 tablespoon fish sauce
  8. Prepare 1 block tofu (soft or firm) diced into 1 in cubes
  9. Make ready 2 eggs
  10. Take 2 scallions chopped into 1 in pieces
  11. Prepare 1 tablespoon Chinese cooking wine
  12. Make ready 1 tablespoon sesame oil
  13. Prepare Rice noodles (optional)
Instructions to make Kimchi Soup:
  1. Heat oil in Dutch oven or large pot
  2. Add garlic and ginger and sauté for 2 min. Add gochujang and sauté for 1 min
  3. Add kimchi and sauté for 30 seconds
  4. Add chicken stock and fish stock and bring to a boil
  5. Once boiling, lower heat to simmer and add tofu. Simmer for 5-10 min.
  6. Crack eggs directly into soup and stir quickly. Eggs should become stringy (like egg drop soup)
  7. Add scallions, cooking wine and sesame oil. Simmer for 2 min
  8. Enjoy with a side of rice or rice noodles!
