- Make ready 1 tablespoon neutral oil
- Get 3 gloves garlic chopped
- Take 2 tablespoons ginger chopped

- Get 1 cup kimchi chopped
- Prepare 4 cups chicken stock
- Prepare 1 tablespoon fish sauce
- Prepare 1 block tofu (soft or firm) diced into 1 in cubes

- Prepare 1 tablespoon Chinese cooking wine

Instructions to make Kimchi Soup:
- Heat oil in Dutch oven or large pot
- Add garlic and ginger and sauté for 2 min. Add gochujang and sauté for 1 min
- Add kimchi and sauté for 30 seconds
- Add chicken stock and fish stock and bring to a boil
- Once boiling, lower heat to simmer and add tofu. Simmer for 5-10 min.
- Crack eggs directly into soup and stir quickly. Eggs should become stringy (like egg drop soup)
- Add scallions, cooking wine and sesame oil. Simmer for 2 min
- Enjoy with a side of rice or rice noodles!
